真空油炸机特点:
l 脱油是在真空状态下,使含油、含水率更低。油炸、脱油、脱水、油过滤一体化设计,在真空下连续性完成,产品含油量低,产品处于负压状态,在这种相对缺氧的条件下进行食品加工,可以减轻甚至避免氧化作用(例如脂肪酸败,酶促褐变和其他化学变质等)所带来的危害。在负压状态,以油炸为传热媒介,食品内部的水分(白水和部分结合水)会急剧蒸发而喷出,使组织形成疏松多孔的结构。
l 自动控制温度,无过热、无过压,确保产品质量和安全生产。
