What Is Vacuum Frying?

Vacuum Frying Machine or Vacuum Fryer Machine is a tool or machine for frying the material in vacuum condition. The way is by lowering the air pressure in the frying chamber so that the boiling point of the water drops up 50-60℃. With the decline of this boiling point, then the material that usually suffered damage or changes to the boiling point at 100℃ can be avoided.

Why Should Use Vacuum Frying

Why should we use a vacuum frying machine for producing a fruit chip? Some materials that are susceptible to high temperatures, this can make the content or even the material itself will be damaged. This kind of material can only be fried if boiling point down. The way is to fry under closed conditions and pressurized vacuum.

In the vacuum condition and low temperatures, fried ingredients are almost unchanged in color, flavor, aroma, and nutriment. In other words, the fried material is not damaged.

Oil damaged can be minimized because the process is done at low temperatures and low pressure. So the use of frying oil is very efficient and can be used again and again.
